Production: The grapes are quickly brought to the winery to avoid mechanical damage, premature oxidation, microbial contamination, and exposure of the clusters to the sun, which could cause alterations in the product and compromise its quality. The first fermentation takes place in steel tanks after the addition of selected yeasts. According to the Martinotti method, the second fermentation is carried out in an autoclave at 14°C to preserve the fragrance and typical aromas of the original grapes. During the transformation of sugar into alcohol, the yeasts release carbon dioxide, which dissolves in the wine and makes it “sparkling”. At the end of this process, the wine is cold stabilized, filtered, and bottled.
