Elaboration: The grapes are harvested and quickly brought to the winery to preserve their quality and avoid alterations that could be caused by early oxidation, microbial contamination, and sun exposure. After harvesting, the grapes are gently pressed, and the obtained must is stored at low temperature to preserve its freshness. Fermentation is partially carried out from the must, and the entire process lasts approximately 40 days at a controlled temperature of 14 to 15 °C, with the addition of selected yeasts. After fermentation, the wine is left in contact with the lees, as the dead yeast cells release important compounds that enhance the body, structure, and aroma of the wine.
