Production: The grapes are hand-harvested and destemmed. The must is separated from the skins by gentle pressing, and fermentation takes place at a controlled temperature of 18°C. The base wine undergoes a second fermentation according to the Martinotti method, in an autoclave at 14°C, with the addition of selected yeasts. Subsequently, the wine is left in contact with the lees, filtered, and bottled. Before commercialization, it is stored in the winery until the balance that has been momentarily lost during the somewhat stressful bottling phase is restored.
The brand: Bottega has a four-century history in the world of wine and grappa.
