Don Guido is a Sherry of black mahogany color, very dense and slightly viscous, with the characteristic aromas of raisins and figs from the Pedro Ximénez grape and with a background of very broad balsamic notes. On the palate, it is low in acidity, very sweet, honeyed and persistent, leaving an exquisite sweetness and perfume in the mouth for a long time.

Production: This sweet Sherry comes from Pedro Ximénez grapes from the Balbaína Estate, an area of Superior Sherry. During sun-drying, these grapes are partially raisined in the sun for 15 days in the drying yards. From these, musts are obtained at high pressures in special presses, which are fortified to 9º. After decanting and settling, following the first cold weather, it is fortified again until reaching 18º, then passing to the Criaderas and Soleras system for its physical-chemical aging by oxidation for a minimum of 20 years.

The Brand: The name of this emblematic Sherry from the Jerez winery Williams & Humbert pays homage to Guido Williams, son of the founder of the winery, Alexander Williams and his wife Amy Humbert. This Pedro Ximénez honors a person who was of great relevance in the Sherry region. Guy Williams (known as Guido) was born in Jerez in 1889 and always maintained deeply rooted British customs. He studied in England, but in 1911 his father asked him to return to Jerez and join the family business along with his brothers Arthur and Charles. Guido Williams fought in World War I with the rank of captain and suffered war wounds that left him with permanent lung damage. For his work on the front, he received the Military Cross of the Order of the British Empire. After the war, he worked at the British Embassy and later rejoined the family business, simultaneously holding the position of vice-consul until his death in 1959.
