Production: Palo Cortado is a peculiar wine, often described as a sherry with the nose of an Amontillado and the palate of an Oloroso. Originally, when sherry fermentation was carried out in butts, the musts were classified according to their fineness for biological aging or as press musts destined for oxidative aging. For the production of Palo Cortado, those musts with special finesse that may have undergone some biological aging are fortified to 18º, thus beginning their oxidative aging. It can be said, therefore, that they are sherries with a “delicate oxidative aging”. For the production of Palo Cortado Don Zoilo, Williams Humbert selects those soleras that stand out for their finesse, as well as their vintages, with which they feed their Palo Cortado soleras, a wine that ages for a minimum of 15 years through the Criaderas and Soleras system.

The Brand: Launched in the 1960s, the Don Zoilo range consists of Fino, Amontillado, Palo Cortado, Oloroso and Pedro Ximénez. All these sherries have an average age of 15 years, except for the Fino which has a minimum age of 10 years. This range of sherries is produced using the dynamic Criaderas and Solera system. The result is exceptional wines that maintain their quality year after year.
