Wine with an old gold color. Very pungent and intense aroma, complex with light notes of nuts and hazelnuts. On the palate, it is dry, silky, with very balanced acidity, full-bodied and a very elegant character that lingers in the mouth, with an extremely expressive aftertaste.

Información Supplementary information

Production: Palo Cortado is a peculiar wine, often described as a sherry with the nose of an Amontillado and the palate of an Oloroso. Originally, when sherry fermentation was carried out in butts, the musts were classified according to their fineness for biological aging or as press musts destined for oxidative aging. For the production of Palo Cortado, those musts with special finesse that may have undergone some biological aging are fortified to 18º, thus beginning their oxidative aging. It can be said, therefore, that they are sherries with a “delicate oxidative aging”. For the production of Palo Cortado Don Zoilo, Williams Humbert selects those soleras that stand out for their finesse, as well as their vintages, with which they feed their Palo Cortado soleras, a wine that ages for a minimum of 15 years through the Criaderas and Soleras system.

For the production of Palo Cortado Don Zoilo, Bodegas Williams Humbert selects their soleras that stand out for their finesse, as well as their vintages, with which they feed their palo cortado soleras, a wine that ages for 15 years through the Criaderas and Soleras system.

The Brand: Launched in the 1960s, the Don Zoilo range consists of Fino, Amontillado, Palo Cortado, Oloroso and Pedro Ximénez. All these sherries have an average age of 15 years, except for the Fino which has a minimum age of 10 years. This range of sherries is produced using the dynamic Criaderas and Solera system. The result is exceptional wines that maintain their quality year after year.

Preguntas frecuentes FAQs

Palo cortado is a fortified sherry that combines the characteristics of fino and oloroso. It begins its aging under the flor veil, like fino, but at the end of the aging process, the flor process is cut off, and the wine continues to oxidize like an oloroso. This gives it a unique complexity, with the freshness of a fino and the intensity of an oloroso.

The name palo cortado comes from an old tradition in which winemakers marked the butts with a line or “palo” to indicate that the wine had been selected for special aging. The “cut” refers to the interruption of the aging process under flor to give way to oxidation.

Palo cortado is best enjoyed as an aperitif or during a meal accompanied by complex dishes. It is ideal for pairing with aged cheeses, Iberian ham, fatty fish or red meat. It can also be enjoyed on special occasions due to its sophistication.

Palo cortado should be drunk at a temperature between 14 and 16°C. It can be served alone, to appreciate its complexity, or accompanied by dishes that highlight its notes of nuts, spices, and wood. It is also perfect to enjoy in a large glass, allowing its aromas to develop while consuming.
