Sherry wines, also known as sherry, are fortified wines produced in the triangle of Jerez de la Frontera, Sanlúcar de Barrameda and El Puerto de Santa María, in Andalusia. They are characterised by their biological or oxidative ageing process and the use of varieties such as Palomino Fino, Pedro Ximénez or Moscatel, which give rise to very different styles.
Among the best known are Fino, Manzanilla, Amontillado, Oloroso and Pedro Ximénez.

It is a fortified wine made in the region of Jerez, in the south of Spain. It is aged through a system of criaderas and soleras, and can be dry (like Fino or Amontillado) or sweet (like Pedro Ximénez).
It depends on the type: Fino and Manzanilla are served chilled and go well with appetizers or seafood. The more complex styles such as Oloroso are best served slightly chilled, on their own and with cured cheeses.
