Elaboration: It is made from old vineyards that on average exceed 60 years, with very low yields per plant but of great quality. The plots that will be part of this wine are carefully analyzed and tasted, and harvested at their best moment manually in 15 kg boxes. All the grapes pass through a selection table to remove leaves or any cluster that is not well ripened and are destemmed without crushing. The movement of grapes and racking is done by gravity, without pumping, so the wine is never agitated and flows by its own weight throughout the entire production. Aging occurs in 225-liter barrels for at least 18 months in 80% French oak and 20% American oak, most of them new. Racking is done every 4 months to oxygenate and clean the wine. To respect the purity of the vineyards to the maximum, this wine has not been filtered or treated aggressively, so over time slight sediments may appear as a product of a completely natural evolution.
