Use a sharp ham knife and begin making thin, uniform cuts, always parallel to the bone. Remove the rind and excess fat as you progress to ensure the best flavor and texture.
The starting point depends on the consumption time. If you’re going to consume it quickly, start with the maza (thick end), the juiciest and richest part. If consumption will be slower, start with the babilla (thin end), which is more cured and withstands the passage of time better.
