Production Fino de Añada 2015 : Grapes from the Pago de Añina vineyard were painstakingly selected from the 2015 harvest for this fino. The first must obtained was fermented at controlled temperatures. Once the lees were filtered off the must was then fortified to 15.5% abv and a period of biological ageing in old casks began, a layer of yeast, the flor, occurring naturally upon the surface. For bottling, wine was selected and drawn from each one of the full set of 12 casks

Tasting notes : Golden in colour with marked flecks of gold, great aromatic complexity with marked aromas typical of biological ageing. A wine with volume, very long and very expressive, fine, oily and with lingering persistence.
