Tasting note
It has a pale straw yellow colour with intense, constant bubbles that give it liveliness and a marked refreshing character. The nose is very expressive, combining the floral and citrus notes of Buddha’s Hand with fresh herbal nuances of mint, evoking freshly crushed leaves. All this is supported by a soft yeast background and a touch of salinity, inherited from the fine base wine, along with subtle notes of ripe white fruit such as fresh pear and green apple, and a delicate floral hint.
On the palate, it offers a sweet but balanced attack, offset by citrus acidity and effervescence from the carbonation. The sweetness, well integrated and not at all cloying, coexists with lively bubbles that add creaminess and freshness. Clean citrus notes dominate, accompanied by a slight balsamic hint of mint and a salty, dry nuance characteristic of fino, which balances the whole and lengthens the sensation in the mouth.
The finish is medium-long, leaving an aftertaste where sweet citrus, mint and a mineral-salty echo intertwine, naturally inviting another sip.
