Production: After a selection of first-press musts from our best vineyards, it goes through the phases of cold static decantation, fermentation at 22°C, and early racking. Subsequently, after classification based on finesse, the must is fortified to 15° with the best wine distillates to obtain the traditional ‘sobretablas’, which then enter the dynamic aging and maturation system of Criaderas and Soleras. It is through these criaderas where biological aging takes place under a layer of flor in traditional 500-liter American oak barrels for a minimum average time of 5 years, until reaching the solera, from which the ‘saca’ is made for consumption.
The Brand: Fino Pando is part of the oldest soleras of Williams Humbert Wineries, established in the first half of 1878. The origin of its name comes from the initials of the shipping company P These initials were stamped on the boxes of this sherry before being shipped to international markets, thus reflecting the strong international character that Williams Humbert has had since its origins. From this P and O comes the name of this emblematic Fino.
