Notas de cata Tasting note

Very bright old gold colored wine. Very pungent, intense and complex aroma, reminiscent of “flor”, with notes of toasted almond. Very dry, fresh, with full body and character. Elegant on the palate, unctuous, with great aftertaste persistence.

An incredibly expressive wine.

Información Supplementary information

Production: After selecting first-press musts from our best vineyards, it goes through the stages of cold static decantation, fermentation at 22°C and early lees removal. Subsequently, after classification based on finesse, it is fortified to 15° with the best wine distillates to obtain the traditional sobretablas, which then enter the dynamic aging and maturation system, classic to Jerez, of Criaderas and Soleras. It is through these criaderas where biological aging takes place under a layer of flor in traditional American oak barrels for a minimum average time of 10 years, until reaching the solera, from which the “saca” is performed for consumption.

The Brand: Launched in the 1960s, the Don Zoilo range consists of Fino, Amontillado, Palo Cortado, Oloroso and Pedro Ximénez. All these sherries have an average age of 15 years, except for the Fino which has a minimum age of 10 years. This range of sherries is produced using the dynamic Criaderas and Solera system. The result is exceptional wines that maintain their quality year after year.

Preguntas frecuentes FAQs

A dry wine is a wine that has a low amount of residual sugars, which means that almost all the sugar from the grapes has been converted into alcohol during fermentation. Dry wines do not have a sweet taste, but rather tend to have higher acidity and complexity.

Fino is a type of fortified wine from the Jerez region, characterized by its freshness, lightness and dry flavor. It is made from the Palomino grape and aged under a layer of flor in the solera system, which gives it its unique character, with aromas of nuts, almonds and saline notes.

A wine is considered dry when its sugar content is low, generally less than 4 grams per liter. This means that fermentation has converted almost all the natural sugar from the grapes into alcohol, resulting in a wine without a sweet taste.

A dry wine, such as fino or manzanilla, is best enjoyed chilled, at a temperature between 7-12°C, depending on the type of wine. It can be served alone, as an aperitif, or accompanied by dishes such as seafood, fish, cured cheeses or tapas.
