Don Zoilo fortified wines are perfect to accompany a wide variety of dishes. The Amontillado is especially enjoyable with fish, seafood or white meat dishes. The Palo Cortado, with its more robust structure, pairs well with cured cheeses, red meats or game dishes. Pedro Ximénez is ideal for desserts, especially those based on chocolate or nuts. Each wine brings out the characteristics of the food with which it is paired, creating a unique gastronomic experience.
FAQs
Generoso wines are a category of wines typical of the Jerez region in southern Spain. They are characterised by their ageing process in American oak casks and their high alcohol content, which gives them a unique complexity and structure. Among the best known types are Fino, Amontillado, Palo Cortado, Oloroso and Pedro Ximénez, each with its own particularities in terms of taste and aroma.
Don Zoilo fortified wines should be served at the right temperature to enjoy their maximum expression. It is recommended to serve them in large glasses so that the aromas are released correctly.
Of course you can! Don Zoilo’s fortified wines, especially Palo Cortado or Amontillado, can be an excellent base for sophisticated cocktails. These wines add a unique and elegant touch to cocktails such as the Sherry Cobbler or the Sherry Sour, a variant of the classic whisky sour.
