Preparation
To begin, chill a coupe or old-fashioned glass by filling it with ice while preparing the cocktail. In a mixing glass or shaker with ice, add the Gran Duque de Alba brandy, Don Zoilo Oloroso 15 years, clarified banana cold brew with Ethiopian coffee, and if desired, a touch of cocoa or nut bitters to add complexity.
If using a mixing glass, gently stir with a spoon to integrate the ingredients while maintaining body and texture. If you prefer a more aerated and lighter sensation, briefly shake in a cocktail shaker. Next, discard the ice from the glass and strain the mixture over it, serving the cocktail without ice to preserve its elegance and aromatic concentration.
To finish, crown the surface with a cloud of siphoned dulce de leche and Lotus biscuit foam. This indulgent touch not only adds a silky texture but also envelops the whole in a sweet and sophisticated finish.
